UHT奶,又称常温奶、高温奶、超高温瞬时消毒奶、超高温热处理奶,其生产工艺是在137~145摄氏度下加热4~15秒。因为高温处理,牛奶的一些不耐热营养成分如维生素等会遭到破坏,其中的乳糖也会焦化,蛋白质与乳糖还会发生一定的美拉德反应,使牛奶褐变,并破坏牛奶原有的风味。

Due to high temperature treatment, some heat-resistant nutrients such as vitamins in milk will be destroyed, and lactose will also be coked. There will be Maillard reaction between protein and lactose, which will cause milk browning and destroy the original flavor of milk.
