酸奶是以鲜奶为原料,接种乳酸杆菌在温度适宜及无氧条件下发酵而成的。酸奶经过发酵后,原有的乳糖部分转变成乳酸,但仍保留有部分的乳糖,所以形成特有的酸甜风味。
Yoghurt is made of fresh milk, inoculated with Lactobacillus, and fermented under suitable temperature and anaerobic conditions. After fermentation, the original lactose part is converted into lactic acid, but some lactose is still retained, so the unique sweet and sour flavor is formed.
酸奶的种类:凝固型、搅拌型和添加各种果汁果酱等辅料的果味型酸奶。
